Offered by the Moscow seedswoman Marina Danilenko, These elongated shaped fruits are considered a paste tomato due to having low water content. it’s also low acid more than the standard paste tomatoes, reaching a width of about 2 inches and a length of about 3 inches. Great for making sauces, 90 days.

The tomato (see pronunciation) is the edible, red fruit of Solanum lycopersicum, commonly known as a tomato plant, which belongs to the nightshade family, Solanaceae. The species originated in Central and South America. The Nahuatl (Aztec language) word tomatl gave rise to the Spanish word “tomate”, from which the English word tomato originates.

Numerous varieties of tomato are widely grown in temperate climates across the world, with greenhouses allowing its production throughout the year and in cooler areas. The plants typically grow to 1–3 meters (3–10 ft) in height and have a weak stem that often sprawls over the ground and vines over other plants. It is a perennial in its native habitat, and grown as an annual in temperate climates. An average common tomato weighs approximately 100 grams (4 oz).

Its use as a food originated in Mexico, and spread throughout the world following the Spanish colonization of the Americas. Tomato is consumed in diverse ways, including raw, as an ingredient in many dishes, sauces, salads, and drinks.

Interesting information about this particular tomato and its low water content, I guess then it would make great sauce for a pizza because you want your sauce to be fairly reduced and concentrated. All types of tomato sauce are so versatile and easy make. I never understand why people buy ready made tomato sauces with all kinds of chemical additives when there are so many wonderful varieties of tomatoes you can buy or grow these days.

  2. FULL RED is a tomato sauce all restaurants and pizza places use but its not available to the general public. making sauce from fresh tomatoes is a labor of love. To hot an you burn it, if you don’t cook it long enough then the water separates out of the sauce when you serve it. it’s very tricky to make a killer sauce that is better then a commercial grade sauce. it takes a lot of trial an error an believe me i made many many errors! and making tomato paste is almost impossible without burning it especially if your cooking on an electric rage. But i know a few tricks on how to make a sauce with out over cooking it an still get that nice thick sauce : )

  4. We did well with Roma a few years ago. Freezing them before making sauce helps.

  6. Freezing them breaks down the cell walls and helps them become more like sauce and less like stewed tomatoes.
